Mushroom in Cooking
Go to: Previous Article Next Article
The decision as to which mushroom should be considered the tastiest and best for cooking is in the final analysis a question of your personal choice.
However, a nearly perfect mushroom flavor can be achieved by blending together several species of edible mushrooms, such as the range of Boleti. Though mushrooms are more of a delicacy than a regular food, nutritional value must not be under-estimated. They play an important yet traditional role in a variety of dishes. As such they present a supplementary food additive, which fulfils an important biological and health-protecting fimetion.
Mushrooms are usually not as rich in protein as meat and also contain some nitrogenous chemicals in a form which makes digestion difficult.
The information found in the writings of such early natural scientists as Pliny and Galen shows that other, less common and tasty mushrooms were also eaten.
In any case, mushrooms should not be eaten in large quantities. Primarily they serve as a supplementary item for a major dish or can be used as a condiment, as they add a characteristic flavor to delicious dishes and often have a very delicate taste.
Whilst it is true that the number of poisonous species is very small in comparison with the edible or harmless ones, it is also true that edible mushrooms are not all of the same high quality.
